Poached Pears in Spiced Syrup

Firm-ripe pears gently poached with cinnamon, star anise, cloves, and lemon, then served with a lightly reduced aromatic syrup.

Instructions

  1. Step 1

    Peel the pears, leaving the stems intact. Trim a thin slice from each base so the pears can stand upright.

    Ingredients used: 4.0 piece Pear

    Cookware: paring knife, Vegetable Peeler

  2. Step 2

    Combine the water, sugar, lemon juice, cinnamon, star anise, and cloves in the saucepan. Stir over medium heat until the sugar dissolves and the syrup begins to simmer.

    Timer: 5 min (fixed)

    Ingredients used: 2.0 piece Cinnamon, 200.0 gr Granulated Sugar, 30.0 ml Lemon Juice, 2.0 piece Star Anise, 750.0 ml Water, 4.0 piece Whole Clove

    Cookware: saucepan, wooden spoon

  3. Step 3

    Lower the prepared pears into the syrup and reduce to low heat. Maintain a gentle simmer, turning the pears occasionally, until tender when pierced near the base with a paring knife.

    Timer: 25 min (fixed)

  4. Step 4

    Lift the pears from the syrup and arrange them in the serving dish.

  5. Step 5

    Remove and discard the whole spices. Simmer the syrup over medium heat until slightly reduced and glossy.

  6. Step 6

    Let the syrup cool briefly, then pour it over the pears. Serve warm, at room temperature, or chilled.
