Pea and Mint Risotto
A creamy Italian rice dish with sweet peas, fresh mint, Parmesan, and lemon.

Step 1
Bring the vegetable stock to a gentle simmer in a saucepan, then keep it warm over low heat.

Combine ¾ cup (150 gr) peas, 6 ¾ tbsp (100 ml) warm stock, and 6 ¼ tbsp (10 gr) mint in a heatproof jug. Blend until smooth.

Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until soft and translucent.

Add the garlic and cook over medium heat until fragrant.

Stir in the Arborio rice and cook over medium heat until the grains look slightly translucent at the edges.

Pour in the wine and stir until it has almost completely evaporated.

Add 3 ¾ cup (900 ml) warm stock one ladleful at a time, stirring frequently over medium heat. Allow each addition to be mostly absorbed before adding the next, until the rice is creamy but still slightly firm.

Stir in the prepared pea puree and the remaining ½ cup (100 gr) peas. Cook over low heat until the peas are hot and the risotto is loose and creamy.

Remove the pan from the heat. Stir in the Parmesan and butter until melted and fully incorporated.

Finely grate the lemon zest over the risotto, then squeeze in its juice. Stir in the remaining 3 ¼ tbsp (5 gr) mint, salt, and black pepper, then serve immediately.
