Pasta with Tomato and Basil Sauce
Pasta tossed with a simple Italian tomato sauce scented with garlic, fresh basil, and olive oil, then finished with Parmesan cheese.
Instructions

Step 1
Heat the olive oil in a large skillet over low heat. Add the garlic and cook until fragrant but not browned.

Add the tomatoes, ¼ tbsp (4 gr) salt, and black pepper. Bring to a gentle simmer over medium heat, then reduce to low heat and cook until slightly thickened.

Stir 15 gr basil into the sauce and keep it warm over low heat.

Meanwhile, bring the water to a boil in a large pot over high heat. Add the remaining 1 tbsp (20 gr) salt.

Add the pasta to the boiling water and cook until al dente according to its package timing, stirring occasionally.

Scoop out 120 ml pasta cooking water, then drain the pasta in a colander.

Add the drained pasta to the sauce and toss over low heat. Add reserved pasta cooking water a little at a time, as needed, until the sauce coats the pasta.

Remove the skillet from the heat. Toss in the Parmesan cheese and the remaining 5 gr basil, then serve immediately.
