Paleo Breakfast Casserole
A hearty baked egg casserole with breakfast sausage, roasted sweet potato, spinach, and colorful vegetables.
Instructions

Step 1
Preheat the oven to 200°C.

Grease the baking dish with 1 tsp (5 ml) olive oil.

Toss the sweet potato with 1 tbsp (15 ml) olive oil and ½ tsp (3 gr) salt on the baking sheet. Roast until nearly tender and lightly browned.

Heat 2 tsp (10 ml) olive oil in the skillet over medium heat. Add the pork sausage and cook, breaking it into small pieces, until browned and it reaches 71°C.

Add the onion and red bell pepper to the skillet. Cook over medium heat until softened.

Stir in the garlic and spinach. Cook over medium heat until the spinach has wilted and excess moisture has evaporated.

Whisk the eggs, coconut milk, remaining ¾ tsp (5 gr) salt, and ground black pepper until evenly combined.

Reduce the oven temperature to 190°C.

Spread the roasted sweet potato in the prepared baking dish. Add the sausage and vegetable mixture, then pour the egg mixture evenly over the filling.

Bake until the center is set and reaches 74°C.

Rest the casserole before cutting it into 8 portions.
