Moroccan Vegetable Couscous
Fluffy couscous served with chickpeas and tender vegetables in a warmly spiced tomato broth.
Instructions

Step 1
Heat 1 ¼ tbsp (20 ml) olive oil in a large pot over medium heat. Add the onion and cook until softened.

Add the garlic, cumin, coriander, turmeric, paprika, and cinnamon. Stir until fragrant.

Add the carrot and red bell pepper. Cook over medium heat, stirring occasionally.

Stir in the tomato, vegetable stock, chickpeas, raisins, ⅝ tsp (4 gr) salt, and black pepper. Bring to a boil over high heat, then reduce to low heat and simmer.

Add the zucchini and continue simmering over low heat until all the vegetables are tender but retain their shape.

Meanwhile, combine the water and remaining ⅜ tsp (2 gr) salt in a medium saucepan. Cover and bring to a boil over high heat.

Remove the saucepan from the heat. Stir in the instant couscous and remaining 2 tsp (10 ml) olive oil, cover, and let stand.

Uncover the couscous and separate the grains gently with a fork.

Remove the vegetable stew from the heat and stir in the lemon juice.

Divide the couscous among four dishes, spoon the vegetable stew over it, and finish with the parsley.
