Moroccan Chicken Tagine
Bone-in chicken braised with warm Moroccan spices, preserved lemon, green olives, and fresh herbs.
Instructions

Step 1
Place the chicken in a mixing bowl and season it evenly with the salt and black pepper.

Heat the olive oil in a Dutch oven over medium heat. Brown the seasoned chicken in batches, skin-side down first, then transfer it to a plate.

Add the onions to the same pot and cook over medium heat until softened and lightly golden, stirring occasionally.

Add the garlic, ginger, cumin, coriander, turmeric, cinnamon, and paprika. Stir over medium heat until fragrant.

Pour in the chicken broth and stir in the preserved lemon, scraping up the browned residue from the bottom. Bring the liquid to a simmer over medium heat.

Return the browned chicken and any collected juices to the pot. Cover and braise over low heat until the chicken is nearly tender.

Stir in the green olives and simmer uncovered over low heat until the sauce thickens slightly and the chicken reaches at least 74°C internally.

Remove the pot from the heat, scatter the cilantro and parsley over the tagine, and serve.
