Mediterranean Chickpea and Tomato Bake

A hearty baked dish of chickpeas in a garlicky, herb-seasoned tomato sauce, finished with crumbled feta, lemon, and fresh parsley.

Instructions

    Preheat the oven to 200°C.

    Heat 2 tbsp (30 ml) of the olive oil in a large skillet over medium heat. Add the onion and cook until softened and lightly golden.

    Add the garlic, dried oregano, cumin, and paprika. Stir over medium heat until fragrant.

    Add the tomatoes, salt, and black pepper. Simmer over medium heat until the sauce thickens slightly.

    Put the chickpeas in the baking dish, pour over the tomato sauce, and stir until evenly combined.

    Scatter the feta over the mixture and drizzle with the remaining 1 tbsp (15 ml) olive oil. Bake uncovered at 200°C until bubbling and browned around the edges.
