Lentil and Spinach Curry
A warming Indian-style curry of tender red lentils, tomatoes, coconut milk, spinach, and aromatic spices.
Instructions

Step 1
Place the red lentils in a fine-mesh sieve and rinse under cold running water until the water is mostly clear. Drain well.

Heat the vegetable oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until soft and lightly golden.

Add the garlic and ginger. Cook over medium heat until fragrant.

Stir in the cumin, coriander, turmeric, garam masala, and ground chili. Cook briefly over medium heat.

Add the tomato and cook over medium heat, stirring occasionally, until slightly thickened.

Add the rinsed lentils, coconut milk, water, and salt. Bring to a boil over high heat, then reduce to low heat and simmer uncovered until the lentils are tender, stirring occasionally.

Stir in the spinach and simmer over low heat until wilted and tender.

Remove the pot from the heat and stir in the lemon juice. Let the curry stand briefly before serving.
