Korean Braised Tofu

Pan-seared tofu braised in a savory, mildly spicy Korean soy and gochugaru sauce with garlic, scallions, and sesame.

Instructions

  1. Step 1

    Cut the drained tofu into slabs about 1 cm thick, then pat the cut surfaces dry.

    Ingredients used: 450.0 gr Tofu

    Cookware: Chef Knife, cutting board

  2. Step 2

    Whisk together the soy sauce, water, gochugaru, sugar, garlic, and sesame oil to make the braising sauce.

    Ingredients used: 12.0 gr Garlic, 7.0 gr gochugaru, 10.0 ml Sesame Oil, 45.0 ml Soy Sauce, 8.0 gr Sugar, 120.0 ml Water

    Cookware: mixing bowl, whisk

  3. Step 3

    Heat the vegetable oil in the skillet over medium heat. Add the prepared tofu in one layer and cook until lightly golden on both sides, turning once.

    Timer: 8 min (fixed)

    Ingredients used: 30.0 ml Vegetable Oil

    Cookware: skillet, spatula

  4. Step 4

    Spread the onion and 3 sliced scallions over the tofu. Pour in the prepared sauce, reduce to low heat, cover, and simmer gently.

    Timer: 8 min (fixed)

    Ingredients used: 100.0 gr Onion, 3.0 piece Scallion

    Cookware: skillet

  5. Step 5

    Uncover the skillet and simmer over low heat until the sauce is slightly reduced and coats the tofu.

    Timer: 3 min (fixed)

  6. Step 6

    Remove from the heat and finish with the remaining sliced scallion and sesame seeds.
