Korean Braised Short Ribs (Galbi-jjim)
Bone-in beef short ribs slowly braised in a savory-sweet soy and Asian pear sauce with daikon, carrots, mushrooms, chestnuts, and jujubes.

Step 1
Blend the pear, onion, soy sauce, mirin, brown sugar, garlic, ginger, sesame oil, and black pepper until smooth. Set this braising sauce aside.

Rinse the rib pieces under cold running water and check the cut surfaces for bone fragments; alternatively, instead of rinsing, visually inspect them and remove any bone splinters using clean tongs or a disposable paper towel. Place them in the large pot and add the water.

Bring the pot to a boil over high heat. Skim away foam and impurities, then reduce to low heat and simmer uncovered.

Stir in the prepared braising sauce. Cover and simmer over low heat until the ribs begin to soften, turning them once or twice.

Skim excess rendered fat from the surface of the braising liquid.

Cut the daikon and carrots as specified, then add them with the mushrooms, chestnuts, and jujubes. Cover and simmer over low heat until the vegetables and beef are tender.

Uncover and simmer over medium heat until the sauce is glossy and lightly thickened, turning the ribs occasionally to coat them.

Add the scallions and simmer over low heat just until softened.

Transfer the ribs, vegetables, and sauce to a serving platter. Sprinkle with toasted sesame seeds and serve hot.
