Dak Galbi (Spicy Korean Stir-Fried Chicken)
A Korean skillet dish of marinated chicken thighs, cabbage, sweet potato, rice cakes, and aromatic greens cooked in a spicy gochujang sauce.

Prepare the chicken and vegetables as described in the ingredient list. Keep the raw chicken separate from the vegetables.

Place the rice cakes in the mixing bowl. If they are firm, cover them with cold water, soak until slightly pliable, and drain well.

In the clean mixing bowl, whisk together the gochujang, gochugaru, soy sauce, mirin, sugar, garlic, ginger, sesame oil, and black pepper.

Add the chicken to the sauce and toss until evenly coated. Let it marinate while the remaining ingredients are organized.

Heat the neutral oil in the large skillet over medium heat. Add the marinated chicken with all its sauce, spread it into an even layer, and cook until the exterior begins to lose its raw color.

Add the sweet potato, cabbage, onion, and water. Toss gently, cover, and cook over medium heat until the vegetables begin to soften.

Add the prepared rice cakes, scallions, and perilla leaves. Cook uncovered over medium heat, stirring regularly, until the rice cakes are tender, the sauce coats the ingredients, and the chicken reaches 74°C internally.
