Korean Beef Bowls
Steamed rice topped with savory-sweet, garlicky ground beef, crisp vegetables, scallions, and sesame seeds.

Rinse the rice under cool running water until the runoff is mostly clear. Transfer it to the saucepan and add the water.

Bring the rice to a boil over high heat.

Cover the saucepan, reduce to low heat, and cook until the water is absorbed.

Remove the rice from the heat and let it stand, covered. Fluff before serving.

Whisk together the soy sauce, brown sugar, gochujang, sesame oil, rice vinegar, garlic, ginger, and black pepper.

Prepare the cucumber, carrot, and scallions, keeping them ready for assembly.

Heat the neutral oil in the skillet over medium heat. Add the ground beef and cook, breaking it into small pieces, until browned and its center reaches 71°C.

Pour the prepared sauce into the skillet. Cook over medium heat, stirring, until the beef is evenly coated and the sauce thickens slightly.

Divide the rice among four bowls. Top with the beef, cucumber, carrot, scallions, and sesame seeds.
