Keto Tiramisu
An almond-flour sponge layered with rum-spiked espresso, lightly sweetened mascarpone cream, and unsweetened cocoa powder.
Instructions

Step 1
Preheat the oven to 175°C. Grease the square baking pan with the butter and line its base with baking paper.

Whisk the almond flour, baking powder, and salt together in a mixing bowl.

In a clean mixing bowl, beat the eggs with 5 tbsp (60 gr) erythritol sweetener until pale, thick, and increased in volume. Beat in 1 tsp (5 ml) vanilla extract.

Fold the dry mixture gently into the egg mixture. Spread the batter evenly in the prepared pan.

Bake until the sponge is lightly golden and springs back when gently pressed. Set the pan on a cooling rack, then remove the sponge and let it cool completely.

Stir the cooled espresso and dark rum together in a mixing bowl.

Whip the heavy cream in a clean mixing bowl until it forms medium peaks.

Beat the mascarpone with the remaining 5 tbsp (60 gr) erythritol sweetener and remaining 1 tsp (5 ml) vanilla extract until smooth. Fold in the whipped cream to make the mascarpone filling.

Cut the cooled sponge into strips. Arrange half in the serving dish, spoon over half of the espresso mixture, and spread with half of the mascarpone filling.

Add the remaining sponge, espresso mixture, and mascarpone filling in the same order. Sift the cocoa powder evenly over the top.

Cover and refrigerate until the layers are firm and the sponge is evenly softened.
