Honeycomb Candy

A crisp, airy caramel candy made by foaming hard-crack sugar syrup with baking soda.

Instructions

  1. Step 1

    Line the baking pan with parchment paper, leaving enough overhang to lift out the candy.

  2. Step 2

    Combine the granulated sugar, golden syrup, and water in the saucepan. Stir over low heat until the sugar has dissolved and the mixture looks clear.

    Timer: 5 min (fixed)

    Ingredients used: 60.0 ml Golden Syrup, 200.0 gr Granulated Sugar, 30.0 ml Water

    Cookware: Heatproof Spatula, saucepan

  3. Step 3

    Increase to medium heat and bring the syrup to a boil without stirring. Cook until it is amber and reaches 150°C.

    Timer: 8 min (fixed)

  4. Step 4

    Remove the saucepan from the heat. Add the baking soda and whisk briefly, just until incorporated and the syrup expands into a uniform foam.

    Ingredients used: 5.0 gr Baking Soda

  5. Step 5

    Immediately pour the foaming mixture into the lined baking pan without spreading or pressing it.

  6. Step 6

    Let the candy cool completely until firm, then lift it from the pan and break it into pieces.
