Grilled Vegetable Skewers
Colorful skewers of zucchini, bell pepper, red onion, mushrooms, and cherry tomatoes coated with a lemon, garlic, and oregano dressing, then grilled until tender and lightly charred.

Preheat the grill to medium heat.

Cut the zucchini, bell pepper, and red onion as noted. Trim the mushrooms, leaving small ones whole and halving larger ones; keep the cherry tomatoes whole.

Whisk the olive oil, lemon juice, garlic, oregano, salt, and black pepper together in a small bowl.

Place the prepared vegetables in a large bowl, pour over the dressing, and toss until evenly coated.

Thread the dressed vegetables alternately onto eight skewers, leaving a little space between the pieces.

Grill the skewers over medium heat for 10 to 12 minutes, turning every 3 minutes, until the vegetables are tender and lightly charred.
