    Heat the water in a small saucepan over high heat until boiling. Pour it over the sugar in a small mixing bowl and whisk until dissolved.

  2. Step 2

    Stir the mint and malt vinegar into the sugar mixture. Let the mint sauce stand while preparing the lamb.

    Ingredients used: 30.0 ml Malt Vinegar, 2.5 gr Mint

  3. Step 3

    Preheat the grill on high heat.

    Timer: 10 min (fixed)

  4. Step 4

    Place the lamb chops on a rimmed baking sheet. Coat them with the olive oil, garlic, salt, and black pepper.

  5. Step 5

    Place the chops on the hot grill and cook without moving them until well marked, about 4 minutes.

    Turn the chops and grill for another 3–5 minutes, until the thickest part of each chop reaches at least 63°C.

    Transfer the chops to a serving platter and rest them for 5 minutes.
