Grilled Chicken with Salsa Verde
Juicy grilled chicken thighs served with a bright salsa verde made from charred tomatillos, jalapeños, cilantro, and lime.
Instructions

Step 1
Preheat a clean grill to high heat. Place the grill basket on the grill so it also preheats.

Coat the tomatillos, onion, jalapeños, and garlic with 1 tbsp (15 ml) vegetable oil and ⅜ tsp (2 gr) salt. Grill them in the basket, turning occasionally, until softened and charred in spots.

Let the grilled vegetables cool briefly. Peel the garlic, remove the jalapeño stems, and transfer all the grilled vegetables to the blender.

Add the cilantro and lime juice. Pulse to make a slightly coarse salsa verde.

Reduce the grill to medium heat. Pat the chicken dry, then coat it with 1 tbsp (15 ml) vegetable oil, ⅝ tsp (4 gr) salt, and the black pepper.

Grill the chicken over medium heat, turning once, until browned and the thickest part of every thigh reaches 74°C.

Transfer the chicken to a clean cutting board and let it rest before serving with the salsa verde.
