Grilled Chicken Shawarma
Yogurt-marinated chicken thighs grilled with warm Middle Eastern spices and served in pita with fresh vegetables and creamy tahini sauce.
Instructions

Step 1
Combine the yogurt, olive oil, spices, black pepper, 3 tbsp lemon juice, 6 ⅜ clove (20 gr) garlic, and 1 ½ tsp (10 gr) salt in a mixing bowl. Coat the chicken thoroughly and refrigerate for at least 30 minutes.

Whisk the tahini with 2 tbsp (30 ml) lemon juice, 2 ⅝ clove (8 gr) garlic, and ⅝ tsp (4 gr) salt. Gradually whisk in the water until the sauce is smooth and pourable.

Combine the tomato, cucumber, red onion, and parsley in a clean mixing bowl.

Preheat the grill over medium heat for 10 minutes.

Remove the chicken from the marinade and place it on the grill. Cook for 5 to 7 minutes per side, until lightly charred and the thickest part reaches 74°C.

Transfer the chicken to a clean plate and rest it for 5 minutes, then slice it across the grain.

Warm the pita bread on the grill over medium heat, turning once, until pliable and lightly toasted.

Fill each warm pita with sliced chicken and the vegetable mixture, then finish with tahini sauce.
