Grilled Chicken Caesar Salad
Grilled chicken breast served over crisp romaine with homemade Caesar dressing, Parmesan, and golden croutons.
Instructions

Step 1
Heat the oven to 200°C and line a baking sheet with parchment paper. Preheat the grill over medium heat.

Toss the bread with 2 tbsp (30 ml) olive oil and ⅛ tsp (1 gr) salt on the prepared baking sheet. Bake until crisp and golden, turning once.

Mash the anchovy and garlic into a paste in a small mixing bowl. Whisk in the mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, olive oil, ⅜ tsp (2 gr) salt, and ⅜ tsp (1 gr) black pepper until smooth.

Coat all 4 chicken breasts with 1 ¼ tbsp (20 ml) olive oil, ½ tsp (3 gr) salt, and ⅞ tsp (2 gr) black pepper.

Grill the chicken over medium heat, turning once, until browned and the thickest part reaches 74°C.

Transfer the chicken to a clean cutting board, rest it, and then slice across the grain.

Place the romaine in a large mixing bowl. Add the prepared dressing, croutons, and 40 gr Parmesan, then toss until evenly coated.

Divide the salad among four plates, arrange the sliced chicken on top, and finish with the remaining 20 gr Parmesan.
