Greek Pasta Bake With Mince
A pastitsio-style Greek pasta bake layered with warmly spiced beef and tomato sauce, pasta, and a rich cheese béchamel.

Step 1
Preheat the oven to 190°C and set out a deep baking dish.

Bring a large pot of water to a boil, add 1 tsp (6 gr) salt, and cook the pasta for about 2 minutes less than the package directions.

Drain the pasta well, return it to the pot, and toss it with 40 gr kefalotyri cheese.

Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened.

Add the garlic and cook briefly until fragrant.

Add the ground beef and cook over medium heat, breaking it into small pieces, until browned and its internal temperature reaches 71°C.

Stir in the tomato paste and cook until it darkens slightly.

Add the crushed tomato, red wine, cinnamon, oregano, salt, and black pepper. Simmer over low heat until thickened, stirring occasionally.

Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook until smooth and lightly golden.

Gradually whisk in the milk. Add the remaining ⅜ tsp (2 gr) salt and the nutmeg, then cook over medium heat until the béchamel is thick and smooth.

Remove the béchamel from the heat and let it cool briefly. Whisk in the eggs and the remaining 80 gr kefalotyri cheese until combined.

Spread the prepared pasta evenly in the baking dish. Cover it with the meat sauce, then spread the béchamel over the top.

Bake until deeply golden on top and the center reaches 74°C.
