Greek Meatballs in Tomato Sauce
Tender Greek-style beef meatballs flavored with parsley, oregano, cumin, and garlic, then finished in a warmly spiced tomato sauce.

Step 1
Heat the oven to 220°C and line a rimmed baking sheet with parchment paper.

Combine the breadcrumb and milk in a mixing bowl. Let the mixture stand until the liquid is absorbed.

Add the beef, egg, parsley, cumin, ¾ piece (80 gr) yellow onion, 2 clove (6 gr) garlic, 1 tsp (1 gr) oregano, ⅝ tsp (4 gr) salt, and 1 gr black pepper. Mix just until evenly combined.

Shape the mixture into 16 evenly sized meatballs and arrange them on the prepared baking sheet.

Coat the meatballs with 1 tbsp (15 ml) olive oil. Bake until lightly browned and partially cooked through.

While the meatballs bake, warm 2 tbsp (30 ml) olive oil in a large saucepan over medium heat. Add 1 ¼ piece (120 gr) yellow onion and cook until softened, then add 2 clove (6 gr) garlic and cook until fragrant.

Stir in the tomato paste, cinnamon, and remaining oregano. Cook over medium heat until the tomato paste darkens slightly.

Add the crushed tomato, water, sugar, remaining salt, and remaining black pepper. Bring to a gentle simmer over medium heat, then reduce to low heat and cook until slightly thickened.

Transfer the baked meatballs to the sauce. Simmer over low heat until tender and the centers reach 71°C.
