Fish and Vegetable Curry
A gently spiced coconut curry with tender white fish, cauliflower, bell pepper, green beans, and tomato.
Instructions

Step 1
Place the fish in a bowl and season evenly. Refrigerate it while starting the curry.

Heat the vegetable oil in a large saucepan over medium heat.

Add the onion and cook, stirring occasionally, until softened and lightly golden.

Add the garlic, ginger, curry powder, cumin, and turmeric. Stir over medium heat until fragrant.

Stir in the tomato and cook until it begins to break down.

Add the coconut milk, vegetable stock, cauliflower, and remaining salt. Bring to a gentle boil over medium heat, then cover and simmer over low heat until the cauliflower is nearly tender.

Add the bell pepper and green beans. Simmer uncovered over low heat until crisp-tender.

Nestle the seasoned fish into the curry. Cover and simmer gently over low heat until opaque, flaky, and 63°C at the thickest part.

Remove the saucepan from the heat. Stir in the lime juice and cilantro, then serve.
