Fava Split Pea Dip

A smooth Moroccan-style dip of dried split fava beans flavored with garlic, cumin, paprika, lemon, and olive oil.

Instructions

  1. Step 1

    Rinse the split fava beans thoroughly under cool running water and drain.

    Ingredients used: 250.0 gr Fava Beans

    Cookware: fine mesh strainer

  2. Step 2

    Put the rinsed beans, water, and garlic in the saucepan. Bring to a boil over high heat, skimming away any foam that rises.

    Ingredients used: 12.0 gr Garlic, 900.0 ml Water

    Cookware: saucepan, wooden spoon

  3. Step 3

    Reduce to low heat and simmer uncovered, stirring occasionally, until the beans are very soft and beginning to collapse.

    Timer: 45 min (fixed)

    Cookware: saucepan, wooden spoon

  4. Step 4

    Remove the saucepan from the heat. Add the cumin, paprika, salt, lemon juice, and olive oil, then blend until smooth and creamy.

    Timer: 2 min (fixed)

    Ingredients used: 5.0 gr Fine Salt, 4.0 gr Ground Cumin, 30.0 ml Lemon Juice, 30.0 ml Olive Oil, 2.0 gr Paprika

    Cookware: Immersion Blender, saucepan

  5. Step 5

    Transfer the dip to a serving bowl and drizzle with the remaining 1 tbsp (15 ml) olive oil. Serve warm or at room temperature.
