Fava Bean Puree

A smooth Mediterranean-style puree of tender green fava beans, lemon, garlic, and olive oil, suitable as a dip or spread.

Instructions

  1. Step 1

    Bring the cooking portion of the water to a boil in a large saucepan over high heat.

    Ingredients used: 1500.0 ml Water

    Cookware: large saucepan

  2. Step 2

    Add the fava beans and cook until tender and bright green.

    Timer: 5 min (fixed)

    Ingredients used: 450.0 gr Fava Beans

  3. Step 3

    Drain the beans in a colander and let them cool briefly. Slip off and discard the tough outer skins.

    Timer: 10 min (fixed)

  4. Step 4

    Place the peeled beans in a food processor with the garlic, puree portion of the olive oil, lemon juice, remaining water, salt, and black pepper. Process until smooth.

    Timer: 2 min (fixed)

    Ingredients used: 1.0 gr Black Pepper, 45.0 ml Extra Virgin Olive Oil, 4.0 gr Garlic, 1.0 piece Lemon, 5.0 gr Salt, 60.0 ml Water

    Cookware: food processor

  5. Step 5

    Transfer the puree to a serving bowl and drizzle with the remaining olive oil. Serve warm or at room temperature.
