Ezogelin Soup
A hearty Turkish soup of red lentils, fine bulgur, rice, tomato, red pepper paste, dried mint, and warming spices, served with lemon wedges.
Instructions

Step 1
Place the red lentils and rice together in a fine-mesh sieve. Rinse under cool running water until it runs mostly clear, then drain well.

Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until softened.

Add the garlic and cook over medium heat until fragrant.

Stir in the tomato paste, red pepper paste, mint, paprika, red pepper flakes, and black pepper. Cook over medium heat, stirring continuously, until the pastes darken slightly.

Add the drained lentil-rice mixture, bulgur, water, and salt. Stir thoroughly to loosen any paste from the bottom of the pot.

Bring the soup to a boil over high heat. Reduce to low heat and simmer partially covered, stirring occasionally, until the lentils, rice, and bulgur are very tender.

Stir vigorously to break down some of the softened lentils and create a cohesive but lightly textured soup. Simmer over low heat until the desired consistency is reached.

Ladle the hot soup into bowls and serve with the lemon wedges for squeezing over each portion.
