Crispy Fish Tacos
Baja-style corn tacos filled with crisp beer-battered cod, lime cabbage slaw, and garlic-lime crema.

Step 1
Whisk the sour cream, mayonnaise, garlic, and the crema portion of lime juice until smooth. Set the crema aside.

Toss the cabbage, cilantro, jalapeño, remaining lime juice, and the slaw portion of salt together. Set aside to soften slightly.

Season the dry cod strips evenly with the fish portion of salt and the black pepper.

Pour the vegetable oil into a deep frying pan and heat it over medium heat to 180°C. Place a wire rack over a baking sheet nearby.

Whisk the batter portion of flour with the cornstarch, baking powder, and batter portion of salt. Add the cold beer and whisk just until a slightly lumpy batter forms.

Coat the seasoned fish in the remaining flour, shake off the excess, and dip it in the batter. Fry in batches until crisp, golden, and 63°C at the center, then transfer to the wire rack.

Warm the tortillas in a dry skillet over medium heat until soft and flexible, turning once.

Fill each warm tortilla with cabbage slaw and crispy fish, then finish with the garlic-lime crema. Serve immediately.
