Crispy Baked Vegetable Balls

Tender potato, carrot, and broccoli seasoned and shaped into bite-size balls, then oven-baked until golden and crisp around the edges.

Instructions

  1. Step 1

    Heat the oven to 200°C and line a baking sheet with parchment paper.

    Put the potatoes and carrots in a saucepan, cover with water, and bring to a boil. Cook for 7 minutes.

  3. Step 3

    Add the broccoli and continue boiling until all the vegetables are tender enough to mash.

    Drain the vegetables thoroughly in a colander and let them steam-dry for 5 minutes.

    Transfer the drained vegetables to a mixing bowl and mash until mostly smooth, leaving only a few small pieces.

  6. Step 6

    Mix 15 ml olive oil with the mashed vegetables, then stir in the cornstarch, salt, black pepper, ground red pepper, and garlic powder until evenly combined.

    Shape the mixture into 30 evenly sized balls and arrange them on the prepared baking sheet with space between them.

    Brush the balls evenly with the remaining 15 ml olive oil.

    Bake at 200°C until the undersides are set and beginning to brown.
