Creamy Avocado Pasta
Spaghetti tossed with a smooth, creamy sauce of ripe avocado, basil, Parmesan, lemon, garlic, and olive oil.
Instructions

Step 1
Bring the water to a boil in a large pot over high heat. Stir in 2 ½ tsp (15 gr) of the salt.

Add the spaghetti and cook for 9 minutes, stirring occasionally, until al dente. Reserve 120 ml of the cooking water, then drain the pasta.

Step 3
Halve and pit the avocados, then scoop the flesh into a food processor. Add the basil, garlic, lemon juice, olive oil, Parmesan, black pepper, and the remaining ½ tsp (3 gr) salt.

Add the reserved cooking water to the food processor and blend until the avocado sauce is smooth and creamy.

Step 5
Return the drained spaghetti to the pot off the heat. Add the avocado sauce and toss until evenly coated, then serve immediately.
