Chicken Saganaki
A Greek-style skillet dish of browned chicken simmered in a robust tomato, white wine, and oregano sauce, then finished with feta and parsley.

Step 1
Cut the chicken into bite-sized pieces on a dedicated cutting board. Season it with ½ tsp (3 gr) salt and ¼ tsp (0.5 gr) black pepper.

Heat 1 ¼ tbsp (20 ml) olive oil in the skillet over medium heat. Sear the seasoned chicken in a single layer until browned, then transfer it to a plate; it does not need to be cooked through yet.

Add the remaining 2 tsp (10 ml) olive oil and the onion to the skillet. Cook over medium heat until softened.

Add the garlic, tomato paste, oregano, paprika, remaining ½ tsp (3 gr) salt, and remaining ¼ tsp (0.5 gr) black pepper. Stir over medium heat until fragrant.

Pour in the white wine and scrape up the browned residue from the skillet. Simmer over medium heat until slightly reduced.

Stir in the crushed tomato. Bring the sauce to a gentle simmer, then cook uncovered over low heat until slightly thickened.

Return the chicken and its collected juices to the skillet. Cover and simmer over low heat until the chicken reaches 74°C internally.

Scatter the feta over the chicken. Cover and cook over low heat until the feta softens and the sauce is hot.

Remove the skillet from the heat and sprinkle with parsley before serving.
