Chicken Curry with Coconut Milk
Tender chicken simmered in a warmly spiced tomato and coconut milk sauce.
Instructions

Step 1
Place the chicken in a mixing bowl and season it with ½ tsp (3 gr) of the salt and the black pepper.

Heat the cooking oil in a large skillet over medium heat. Add the seasoned chicken and sear until lightly browned, turning occasionally, then transfer it to a plate.

Add the onion to the same skillet and cook over medium heat until softened and lightly golden.

Add the garlic and ginger. Cook over medium heat until fragrant.

Stir in the curry powder, cumin, turmeric, and cayenne pepper. Cook briefly over low heat.

Add the tomatoes and the remaining 1 tsp (6 gr) of salt. Cook over medium heat until the tomatoes thicken slightly.

Pour in the coconut milk and chicken stock, stirring until the sauce is smooth. Bring it to a gentle simmer over medium heat.

Return the browned chicken and any collected juices to the skillet. Cover and simmer over low heat until the chicken is tender and reaches an internal temperature of 74°C.

Remove the skillet from the heat. Stir in the lime juice and cilantro, then serve the curry hot.
