Chicken Cacciatore
Bone-in chicken thighs braised with mushrooms, bell peppers, tomatoes, red wine, and herbs until tender.
Instructions

Step 1
Season the chicken thighs with 1 ¼ tsp (8 gr) salt and ½ tsp (1 gr) ground black pepper.

Heat the olive oil in the Dutch oven over medium heat. Sear the chicken in batches, skin-side down first, until well browned, then transfer it to the plate.

Add the onion, red bell pepper, yellow bell pepper, and mushrooms to the Dutch oven. Cook over medium heat until the vegetables soften and the mushrooms begin to brown.

Stir in the garlic and tomato paste, then cook over medium heat until fragrant and the paste darkens slightly.

Pour in the red wine and scrape up the browned residue from the bottom. Simmer over medium heat until the wine reduces slightly.

Stir in the crushed tomato, chicken stock, oregano, thyme, bay leaves, remaining ⅝ tsp (4 gr) salt, and remaining ground black pepper. Bring the sauce to a gentle simmer over medium heat.

Return the chicken and its collected juices to the Dutch oven, keeping the skin mostly above the sauce. Cover and braise over low heat.

Remove the lid and simmer over medium heat until the sauce thickens and the thickest part of each chicken thigh reaches at least 74°C.

Remove and discard the bay leaves. Stir in the parsley, then serve the chicken with the sauce and vegetables.
