Cheesy Spinach Stuffed Mushrooms
Tender cremini mushroom caps filled with a creamy spinach, garlic, and three-cheese mixture, then baked with a crisp breadcrumb topping.
Instructions

Step 1
Heat the oven to 200°C and line a baking sheet with parchment paper.

Clean the mushrooms, remove the stems, and finely chop the stems. Arrange the caps cavity-side up on the prepared baking sheet.

Brush the caps with 2 tsp (10 ml) olive oil and season them with ⅛ tsp (1 gr) salt. Bake for 8 minutes, then remove them from the oven.

Heat the remaining 1 ¼ tbsp (20 ml) olive oil in a skillet over medium heat. Add the onion and chopped mushroom stems and cook until softened and their moisture has evaporated.

Add the garlic and spinach. Cook over medium heat until the spinach is wilted and excess moisture has evaporated.

Transfer the spinach mixture to a mixing bowl and let it cool briefly. Mix in the cream cheese, 60 gr mozzarella, Parmesan, 3 tbsp (20 gr) breadcrumbs, the remaining ⅜ tsp (2 gr) salt, and the black pepper.

Pour off any liquid collected inside the mushroom caps, then spoon the filling evenly into the cavities.

Top the mushrooms with the remaining 30 gr mozzarella and 1 ½ tbsp (10 gr) breadcrumbs. Bake at 200°C until the mushrooms are tender and the topping is golden.

Let the stuffed mushrooms rest for 5 minutes before serving.
