Beef and Black Bean Tacos
Warm tortillas filled with seasoned ground beef and black beans, then finished with crisp lettuce, cheddar, salsa, and lime.
Instructions

Warm the tortillas one at a time in a dry large skillet over medium heat until flexible and lightly toasted. Stack them on a plate and cover to keep warm.

Add the olive oil and onion to the large skillet. Cook over medium heat until the onion softens.

Add the ground beef and cook over medium heat, breaking it into small crumbles, until browned with no pink remaining and the center reaches 71°C.

Stir in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and tomato paste. Cook over medium heat until the spices are fragrant and the tomato paste darkens slightly.

Stir in the black beans and water. Simmer over medium heat until the beans are hot and the filling is moist but not watery.

Divide the hot beef and bean filling among the warmed tortillas. Top with the lettuce, cheddar cheese, and salsa.
