Zeytinyağlı Green Beans
Green beans slowly cooked in olive oil with a soft, silky texture and a clean, bright flavor. This Turkish home-style dish is often served warm or at room temperature as a light main course.

Step 1
Heat the olive oil in the lidded heavy-bottomed pot over low heat. Add the thinly sliced onion and sauté with the wooden spoon for 8 minutes, until soft and translucent without browning.

Add the trimmed, rinsed, and cut green bean and the salt. Sauté over medium heat for 8 minutes, stirring gently, until the beans turn bright green and begin to soften.

Add the chopped tomato, stir once with the wooden spoon, and cover the pot. Simmer over low heat for 40 minutes, stirring occasionally, until the beans are soft and silky and the tomatoes have broken down into a glossy sauce.

Turn off the heat and leave the beans covered in the pot for 15 minutes. Serve warm or let them cool to room temperature once the texture is tender and the oil is visible around the edges.
