Vegan Soufflé
Individual savory French-style soufflés with a creamy nutritional-yeast base and whipped aquafaba for lift.
Instructions
-
Step 1
Heat the oven to 200°C with a baking sheet on the middle rack.
-
Step 2
Grease the ramekins with 2 tsp (10 gr) vegan butter. Add the breadcrumbs, turn each ramekin to coat the base and sides, and discard any loose excess.
-
Step 3
Melt the remaining 2 tbsp vegan butter in the saucepan over medium heat. Whisk in the flour and cook until smooth and bubbling.
-
Step 4
Gradually whisk in the soy milk. Cook over medium heat, whisking continuously, until the sauce is thick and smooth.
-
Step 5
Remove the saucepan from the heat. Whisk in the nutritional yeast, Dijon mustard, ⅜ tsp (2 gr) salt, and black pepper.
-
Step 6
Transfer the sauce to the mixing bowl and let it cool until warm rather than hot.
-
Step 7
Whip the aquafaba, cream of tartar, and remaining salt with the electric mixer until glossy stiff peaks form.
-
Step 8
Fold one-third of the whipped aquafaba into the cooled sauce to loosen it, then gently fold in the remainder just until evenly combined.
-
Step 9
Divide the mixture among the prepared ramekins and smooth the tops. Wipe the rims clean and place the ramekins on the hot baking sheet.
-
Step 10
Bake at 200°C until well risen, golden, and set around the edges with a slight wobble at the center. Serve immediately.
