Stuffed Zucchini With Dill Sauce

Tender zucchini filled in a traditional Greek home-cooking style and finished with a dill-forward sauce. It is mild, comforting, and suitable as a lighter main course.

    Trim and hollow the zucchini with a spoon, leaving sturdy walls, and reserve all scooped flesh. Finely chop the reserved flesh on the cutting board.

    Heat 15.0 ml olive oil in the saucepan over medium heat, add the onion, and soften for 7 minutes until translucent and fragrant. Transfer the softened onion to the mixing bowl.

  3. Step 3

    Add the rinsed rice, 150.0 ml water, and 1.0 gr salt to the saucepan; bring the water to a boil, then simmer for 12 minutes until the rice is partially cooked with a firm center. Transfer the rice to the mixing bowl.

  4. Step 4

    Add the chopped reserved zucchini flesh, 20.0 ml olive oil, 15.0 gr dill, 2.0 gr salt, and 1.0 gr black pepper to the mixing bowl and stir until evenly combined. Lightly oil the base of the lidded pot with 10.0 ml olive oil and 1.0 gr salt, then loosely fill the zucchini shells with the mixture and arrange them upright or snugly side by side.

  5. Step 5

  6. Step 6

    Pour the remaining 200.0 ml water into the lidded pot around the stuffed zucchini, cover, and bring to a gentle simmer over low heat. Simmer for 35 minutes until the zucchini is tender when pierced and the rice is fully cooked, retaining the cooking liquid in the pot.
