Spaghetti coated in a creamy, fresh avocado, basil, lemon, and garlic sauce, finished with Parmesan and black pepper.

Instructions

  1. Step 1

    Bring a large pot of water to a boil over high heat. Add 1 ½ tsp (8 gr) salt.

    Add the spaghetti and cook until al dente, stirring occasionally. Drain well and return it to the pot off the heat.

    Halve the avocados, remove the pits with a spoon, and scoop the flesh into a blender. Add the basil, garlic, lemon juice, olive oil, water, ⅜ tsp (2 gr) salt, and black pepper, then blend until smooth.

  4. Step 4

    Pour the avocado sauce over the warm spaghetti and add the Parmesan. Toss until evenly coated, then serve immediately.
