Roasted Duck with Cherry Sauce
Crisp whole roasted duck served with a glossy red wine and cherry sauce.
Instructions

Step 1
Preheat the oven to 220°C. Set the wire rack inside the roasting pan.

Pat the duck dry. Use the tip of a paring knife to prick the skin all over without piercing the meat, then season the duck inside and out.

Place the duck breast-side up on the rack and roast at 220°C for 20 minutes.

Reduce the oven temperature to 180°C and roast for 45 minutes.

Carefully pour the rendered fat from the roasting pan into a heatproof container. Return the duck to the oven and roast at 180°C for another 45 minutes.

Check the thickest part of the thigh without touching bone. Continue roasting at 180°C until it reaches at least 74°C.

Transfer the duck to a carving board and let it rest uncovered for 20 minutes.

While the duck rests, melt half the butter in a saucepan over medium heat. Add the shallot and cook until softened, about 3 minutes.

Add the red wine, red wine vinegar, and sugar. Bring to a boil over high heat, then reduce to medium heat and cook until reduced by about half.

Add the cherries and chicken stock. Simmer over medium heat until the cherries are tender and the sauce lightly coats the spoon.

Remove the sauce from the heat and stir in the remaining butter until glossy.

Carve the rested duck and serve it with the warm cherry sauce.
