Rice Flour Chocolate Milk-Soaked Cake
A tender cocoa and rice-flour cake soaked with milk while warm, then chilled overnight for a moist, sliceable texture.

Heat the oven to 175°C. Line the bottom of the springform pan with parchment paper.

Beat the eggs and sugar in a large bowl until pale, thick, and increased in volume.

Add the yogurt and vegetable oil, then mix just until smooth and evenly combined.

Sift the rice flour, baking powder, vanilla, and cocoa powder together into a medium bowl.

Add the sifted dry mixture to the wet mixture in two additions, folding until no dry pockets remain.

Transfer the batter to the prepared pan and level the top. Bake at 175°C until the center springs back lightly and a skewer emerges without wet batter.

Set the pan on a cooling rack for 5 minutes. Prick the warm cake evenly with a skewer, then slowly spoon the cold milk over the surface.

Let the soaked cake cool to room temperature in the pan.
