Instructions

  1. Step 1

    Place the beef bones in the stockpot, add 2,000 ml of the water, and bring to a boil over high heat. Boil for 10 minutes, then drain and rinse the bones and stockpot thoroughly.

  2. Step 2

    Heat the oven to 230°C. Place the onion and ginger cut-side down on the baking sheet and roast until browned at the edges.

  3. Step 3

    Toast the star anise, cinnamon, cloves, black cardamom, coriander seeds, and fennel seeds in a dry skillet over medium heat until fragrant.

    Return the rinsed bones to the clean stockpot and add the roasted aromatics, toasted spices, brisket, and 4,000 ml of the water. Bring to a boil over high heat, then skim off the foam.

    Reduce to low heat and gently simmer uncovered, skimming the surface when needed.
