Greek Beef Gyros Bowl
A Greek-inspired bowl of seasoned ground beef and rice with fresh tomato-cucumber salad, creamy tzatziki, feta, and pita wedges.
Instructions

Step 1
Combine the rice, water, and ¼ tsp (2 gr) salt in the saucepan. Bring to a boil, cover, reduce to low heat, and simmer until the water is absorbed; remove from the heat, rest covered, then fluff with a fork.

Grate ¾ piece (150 gr) cucumber, then firmly squeeze out as much liquid as possible.

Mix the prepared grated cucumber with the yogurt, 1 ⅜ clove (4 gr) garlic, 1 tbsp (15 ml) lemon juice, dill, and ¼ tsp (2 gr) salt. Refrigerate the tzatziki until serving.

Combine the remaining ¾ piece (150 gr) cucumber with the tomato and red onion in a clean mixing bowl.

Dress the salad with 1 tbsp (15 ml) olive oil, 2 tbsp (30 ml) lemon juice, 1 gr oregano, 1 gr black pepper, and ¼ tsp (2 gr) salt. Toss and set aside.

Heat the remaining 1 tbsp (15 ml) olive oil in the skillet over medium heat. Add the onion and cook until softened and lightly golden.

Add the ground beef and cook over medium heat, breaking it into small pieces as it browns.

Stir in the remaining 2 ⅝ clove (8 gr) garlic, 1 tbsp oregano, cumin, paprika, the remaining ½ tsp (1 gr) black pepper, and the remaining ¼ tsp (2 gr) salt. Continue cooking over medium heat until fragrant and the beef reaches 71°C internally.

Cut the pita bread into wedges.

Divide the rice among four bowls. Top with the seasoned beef, dressed salad, tzatziki, and feta, then serve with the pita wedges.
