Crispy Roasted Chickpeas

Crunchy oven-roasted chickpeas seasoned with paprika, cumin, garlic, and black pepper for a savory snack.

Instructions

  1. Step 1

    Heat the oven to 220°C and place a rack in the middle position.

    Rinse the chickpeas under cool running water, then drain them thoroughly.

    Spread the drained chickpeas over a clean kitchen towel and pat them completely dry. Remove any loose skins that come away easily.

  4. Step 4

    Toss the dried chickpeas with the olive oil and salt in a mixing bowl. Spread them in one layer on a rimmed baking sheet.

    Roast for 20 minutes, then shake the baking sheet to turn the chickpeas.

    Sprinkle the chickpeas with the paprika, ground cumin, garlic powder, and ground black pepper. Turn them with a spatula, then roast until browned and crisp, 12 to 15 minutes.
