Balsamic Chicken with Roasted Veggies
Balsamic-marinated chicken breasts roasted alongside tender zucchini, bell peppers, red onion, and cherry tomatoes.
Instructions

Step 1
Preheat the oven to 210°C and place two rimmed baking sheets in easy reach.

In a mixing bowl, whisk the balsamic vinegar with 2 tbsp (30 ml) olive oil, the honey, Dijon mustard, garlic, oregano, ½ tsp (3 gr) salt, and 1 gr black pepper.

Add the chicken breasts, turn them until coated, and leave them in the marinade while preparing the vegetables, about 10 minutes.

Prepare the zucchini, bell peppers, red onion, and tomatoes as specified, then place them in the second mixing bowl.

Add the remaining 1 tbsp (15 ml) olive oil, ½ tsp (3 gr) salt, and 1 gr black pepper to the vegetables, then toss to coat.

Spread the vegetables in a single layer on one baking sheet and roast for 10 minutes.

Transfer the chicken to the second baking sheet and discard the marinade left in the bowl. Turn the vegetables, place both sheets in the oven, and roast until the chicken reaches 74°C at its thickest point and the vegetables are browned and tender, about 20 to 24 minutes.

Transfer the chicken to a serving platter and rest it for 5 minutes. Arrange the roasted vegetables alongside and serve.
