Tomato Rice Stuffed Vine Leaves

These vine leaves are a classic Mediterranean snack with a tangy rice filling. They are flavorful, bite-sized, and often served as part of a mezze spread.

Instructions

  1. Step 1

    Place the brined grape leaves in the large pot, cover with hot water, and soak for 5 minutes until pliable. Drain in the colander and rinse well.

  2. Step 2

    Rinse the rice in the colander until the water runs mostly clear, then place it in the mixing bowl. Grate the tomato with the box grater into the mixing bowl, chop the onion on the cutting board with the chef's knife, and stir in the tomato, onion, 30.0 ml olive oil, 20.0 ml lemon, mint, and salt with the wooden spoon.

    Cookware: Box Grater — grate tomato, Chef Knife — chop onion, colander — rinse rice, cutting board — chop onion, mixing bowl — mix filling, wooden spoon — stir filling

  3. Step 3

    Lay each softened leaf flat, place a small portion of filling near the stem end, fold in the sides, and roll tightly without overfilling. Use all 24 leaves and arrange the rolls seam-side down in the large pot, then add the remaining 15.0 ml olive oil over them.

  4. Step 4

    Pour 250.0 ml water and 10.0 ml lemon around the rolls in the large pot. Bring the liquid to a gentle simmer over medium heat for 5 minutes.

  5. Step 5

    Reduce the large pot to low heat and simmer for 35 minutes, until the rice is tender, the leaves are soft, and most of the liquid has been absorbed.

  6. Step 6

    Remove the large pot from the heat and let the stuffed leaves rest for 10 minutes before serving. They should be tender and hold their shape when lifted.
