Sütlaç Rice Pudding
A traditional Turkish rice pudding with a creamy, gentle sweetness and a lightly baked top in some versions. It is a comforting dessert that works well after a home-style meal.

Place the rinsed and drained short-grain rice and water in the saucepan. Bring to a gentle simmer over medium-low heat, stirring with the wooden spoon, until the water is absorbed and the rice is tender.

Add the cold whole milk to the tender rice and bring it gradually to a gentle simmer over low heat, stirring with the wooden spoon. Cook until the rice is very soft and the milk has begun to thicken.

Stir in the granulated sugar once the milk is hot, then continue simmering over low heat until the sugar is fully dissolved and the pudding is creamy enough to coat the wooden spoon.

Remove the saucepan from the heat and refrigerate the pudding promptly once it has stopped steaming strongly. Chill until fully cold and set before serving.
