Korean Beef Rice Bowl
Steamed rice topped with savory-sweet gochujang ground beef, lightly pickled vegetables, scallions, and sesame seeds.

Rinse the rice under cold running water until the water is mostly clear. Drain, transfer to the saucepan, and add the water.

Set the uncovered saucepan over high heat and bring the water to a boil.

Cover the saucepan, reduce to low heat, and cook the rice without lifting the lid.

Remove the saucepan from the heat and leave the rice covered to steam.

Cut the carrot into thin matchsticks and thinly slice the cucumber. Toss both with the rice vinegar and salt, then set aside to soften.

Stir together the soy sauce, brown sugar, gochujang, and sesame oil. Finely grate the garlic and ginger into the sauce and mix until smooth.

Heat the neutral oil in the skillet over medium heat. Add the ground beef and cook, breaking it into small pieces, until browned and no pink areas remain.

Pour the prepared sauce into the skillet. Cook over medium heat, stirring, until it coats the beef and the beef reaches 71°C internally.

Thinly slice the scallions. Fluff the rice and divide it among serving bowls, then add the sauced beef and drained vegetables; finish with scallions and sesame seeds.
